Spinach, kale and shaved red cabbage, carrots, matchstick beats, jicama, cucumber, organic yellow tomatos, sizzled parsnips with a homemade goddess style dressing (we can add roasted or raw nuts as well)

Two proteins ( Yampa valley barbacoa pork & southwest achiote rubbed chicken) Mix vegetables -bazimati rice, black bean, chimichurri cabbage, sambal lime sour cream, avocado mash, salsa fresco, pickle jalapinos, Mexican fermented onions, cucumber, radishes, corn salad Tortillas- mix of corn, flour and hard shell tacos. Hot sauces - 2 or 3 of lupitas home made sauces.
